Has your knight in shining armour turned out to be a loser in aluminum foil? Ya, I’ve been there too. Sometimes you have to kiss a lot of frogs before you find your Prince Charming.
I met my ex-husband in a bar (my mom always said, don’t meet a guy at the bar…guess I should’ve listened). I’ve done the online dating thing with eHarmony and Tinder. Sure, some people have great luck online and meet the love of their life. In fact, a good friend of mine met & married the love of his life off Tinder and they just had a baby together a few days ago! My luck online wasn’t so great though. Sure, there are some nice guys online that can turn into friends but my luck had me meeting mostly frogs…with warts, anger management issues, and swamp water breath. My luck turned around though when a friend introduced me to an old high school friend of hers. He’s sweet, tells jokes that are so lame they’re kinda funny, he treats my son like one of his own kids, and he treats me like a princess. So don’t give up! There are a few single Prince Charmings out there left. In the meantime, let’s just enjoy some of these Frog Prince Cupcakes.
Frog Prince Cupcakes:
You can top these with either green sprinkles or pink. The green kinda look like frog warts (delicious, right?) but the pink sprinkles stand out better. I found the Wilton tiara sprinkles at Michaels craft store and the Hot Lips candy can be found at most candy stores. Ready for the recipe? Let’s hop right into it!
Frog Prince Cupcakes
Why kiss a frog when you can indulge in these Frog Prince Cupcakes instead? Sure, too many cupcakes can give you a bellyache but it's better than catching warts from a frog.

1 ¾ cups cake flour
¾ tsp baking powder
¼ tsp baking soda
¼ tsp salt
½ cup unsalted butter, softened
1 cup granulated sugar
3 large egg whites
2 tsp vanilla extract
½ cup sour cream
½ cup milk
½ cup vegetable shortening
½ cup unsalted butter, softened
1 tsp vanilla extract
4 cups confectioners’ sugar
green food colouring
2 tbsp water
1 tbsp meringue powder
Hot Lips candies
green or pink sprinkles
Preheat oven to 350F.
Line 12 muffin cups with paper liners.
In a medium bowl, whisk together cake flour, baking powder, baking soda and salt. Put aside.
In a large bowl, beat butter on high until creamy (about 1 minute).
Add sugar to the butter and beat on high until well mixed (about 2 minutes).
Add in egg whites and vanilla extract then beat on medium speed until mixed.
Beat in sour cream until mixed.
Add in dry ingredients just until mixed (do not over mix).
Beat in milk until mixed – remember not to over mix.
Fill each cupcake liner only half full (it’s important not to overfill these or they won’t rise & bake thoroughly).
Bake 19 to 22 minutes or until a toothpick inserted in the middle of each cupcake comes out clean.
Let cool completed before frosting cupcakes.
Beat (on high) shortening and butter together until light and fluffy. Beat in vanilla extract.
Gradually add in confectioners’ sugar (on low speed) until mixed well.
Beat in water and food colouring.
Beat in meringue powder until fully mixed.
Once cupcakes have cooled, slice fruit-by-the-foot into 2.5” strips.
Place one fruit-by-the-foot strip halfway on the cupcake and halfway hanging off the side.
Use a Wilton 1M tip to pipe a high swirl of frosting on top of the cupcake.
Add one Hot Lips candy to the side of the cupcake.
Add sprinkles and a single tiara sprinkle on the top of the cupcake.
Keep refrigerated until ready to serve.
